Mức tiêu hóa là ngưỡng cửa vào cảu quá trình lợi dụng thức ăn của gia súc. Nếu một dưỡng chất không tiêu hóa được thì không thể nào tiến hành các phản ứng dinh dưỡng được. Mức tiêu hóa một thức ăn được định nghĩa là thành phần của thức ăn không bị bài thải ra phân.
