THESIS ABSTRACT
Nowadays, people's living standards are improved, they are more and more
concerned about quality and food safety. Distributors and consumers who are
aiming for products which have certification of Food quality&safety management
systems according to international practices. Massimo Zanetti Beverage Group
(MZBG) is one of the largest coffee producers in the world and controls its entire
supply chain. To promote the value chain of coffee, MZBG builds the strategy
based on the high appreciation and continuous innovation to make sure that coffee
is recognized worldwide in the hearts of consumers, as well as a symbol of Italian
culture and lifestyle. Massimo Zanetti Beverage Vietnam (MZBV) is a member of a
group that produces high quality coffee products for the Asian market. The
successful application of ISO 22000:2018 in the production at MZBV is the key to
build customers' trust in the quality assurance of products and services, enhance
competitiveness and develop domestic and international markets. However, with the
requirements of constantly updating and renewal of quality standards, MZBV
always need to maintain and update the quality management system, make
continuous improvement and innovation to meet customer expectations.
This thesis systematizes the basic theory of quality management including
quality planning, quality control, quality assurance and quality improvement in all
of coffee production operation. On that basis, this thesis determines the
requirements for quality management and develops a research method to analyze
the status of coffee production operation according to ISO 22000:2018 at MZBV.
Based on the analysis results, this thesis assesses strengths, weaknesses, and
cause analysis in the production process of coffee products according to ISO
22000:2018. From there, solutions and recommendations to improve the quality &
food safety management system for coffee production was proposed according to
ISO 22000:2018 at MZBV in the period of 2022 - 2025.
