Nghiên cứu này tập trung vào việc phân lập và tối ưu hóa quá trình thu nhận exopolysaccharide (EPS) từ vi khuẩn lactic (LAB) phân lập từ thực phẩm lên men truyền thống Việt Nam. Từ 33 chủng LAB phân lập, 21 chủng có khả năng sinh tổng hợp EPS đã được xác định. Điều kiện nuôi cấy tối ưu cho sinh tổng hợp EPS là 30 độ C và pH 6,5.

Nghiên cứu được thực hiện nhằm đánh giá ảnh hưởng của việc bổ sung hỗn hợp polysaccharides ly trích từ rong bún (Enteromorpha intestinalis) ở các mức khác nhau vào thức ăn lên tăng trưởng, tỉ lệ sống, hiệu quả sử dụng thức ăn và khả năng chống sốc của tôm thẻ chân trắng giai đoạn giống.

The coffee industry is growing rapidly and generating increasing amounts of spent coffee grounds annually. Spent coffee grounds contain high levels of polysaccharide, which needs in-depth research to obtain and transform into value-added products.
