Chương 4 được dành để bàn luận đến lý thuyết cơ sở về kỹ thuật làm lạnh đông thực phẩm. Nội dung của chương 5 đề cập đến kỹ thuật bảo quản thực phẩm đã lạnh đông. Chương cuối cùng, chương 6, tác giả sẽ giới thiệu cho bạn đọc về tan giá và làm ấm thực phẩm.75 trang
