Anthocyanins are colored bioactive phytochemicals in the class of flavonoids with high potential as dietary antioxidants. Demand for anthocyanins in functional food and nutraceutical industries has continued to increase over the past decades. However, sources of anthocyanins for commercial exploitation are currently limited.
