Effect of hydrolyzed Lima protein (Phaseolus lunatus) on the quality of yogurt products

This study was conducted to evaluate the possibility of creating a yogurt product that partially replaces hydrolyzed Lima protein with milk material; also, with the use of MTGase, to evaluate the improvement of the water holding capacity of the yogurt product.
