In the study, α-galactosidase released by Lactic acid bacteria catalyse hydrolysis of galactose containing oligosaccharide. Similarly, β-glucosidase of lactic acid bacteria are making a significant contribution to the dietary and sensory attributes of fermented foods as by deglucosylation, they can release flavour compounds from glucosylated precursors and could increases the bioavailability of health-promoting secondary metabolites. Therefore, the aim of this study was to select strains of lactic acid bacteria isolated from ethnic fermented foods of West Garo Hills of Meghalaya state.

In Spring of 1983, I took a position at The University of Michigan. There I met my first Chinese student, Ming Hu, from mainland China, and began a personal and professional relationship that has lasted for nearly 30 years. He is now a Professor at the University of Houston and one of the two editors of this book. I am very pleased to have observed his contributions to science and his success as a scientist over the nearly 30 years I have known him and followed his career.

Flavonoids Flavonoids constitute a large family of polyphenols that contribute to the aroma, taste, and color of fruits and vegetables. Major groups of dietary flavonoids include anthocyanidins in berries; catechins in green tea and chocolate; flavonols (e.g., quercitin) in broccoli, kale, leeks, onion, and the skins of grapes and apples; and isoflavones (e.g., genistein) in legumes. Isoflavones have a low bioavailability and are partially metabolized by the intestinal flora.
