  • The present investigation was aimed to increase consumption of green leafy vegetables in the daily diet thus combating the micronutrient deficiencies, especially iron and calcium. A series of laboratory experiments were carried out to study nutritional constituents of some selected green leafy vegetables and after comparing the iron and calcium content of the dehydrated green leafy vegetables, Amaranthus spinosus, Talinum triangulare and Chenopodium album were found to be higher in both iron and calcium content.

  • The objective of the present study was to assess the nutrient and antioxidant properties of fresh, primary and secondary processed King chilli (Capsicum chinense) products. Six secondary products (King chilli sauce with pulp and extract, king chilli toffee, curry paste, fish masala powder and sprinkler masala powder) were developed by incorporating varying amounts of King chilli. Antioxidant and bioactive components were estimated using standard methods in triplicates and were subjected to sensory evaluation studies.

  • Effect of lemongrass extract and oil on the bioactivity (antioxidant and antimicrobial property) and citral content of paneer was evaluated in this study. Lemongrass was incorporated in the following three ways: i) cut and crushed leaves were added to milk @ 0, 2, 4 and 6% (w/v) or to coagulant solution @ 20% (w/v) and extracted by heat treatment; ii) cut leaves were heat extracted in potable water followed by heat concentration, and chilling. The chilled water was used for soaking paneer blocks; iii) Lemongrass oil added to milk at 0, 0.015, 0.02 and 0.025% levels.
