The aim of this study was to investigate the effect of airfrying process on moisture and oil contents and sensory evaluation of fried potato strips compared with traditional deep-fat frying. Also, study the changes in physicochemical properties of oil extracted from potato strips after frying.

The objective of this study was to determine physicochemical properties (color, moisture, ash, pH, free acidity, HMF, reducing sugars, sucrose and electrical conductivity) of honey produced in Chena district, Southwestern Ethiopia. Nine (9) honey samples each of 0.5 to 1kg were obtained from Chena district. Moisture and ash content were determined by AOAC method.

Amylose‑sodium stearate (SS) complexes (2, 5 and 8%) in heat-moisture treated potato starch (HPS) were evaluated for their physicochemical properties. Based on the DSC thermograms, the amylose - SS complexes were successfully formed with high thermal stability, indicated by a melt temperature (Tpeak) of ≥ 112 ◦C for type I and ≥125 ◦C for type II complexes.

This study aimed to evaluate some physicochemical and functional properties as well analyze phenolic acids profiles & functional groups of raw and microwave or air-oven dried orange and lemon peels (OP&LP) for potential use as functional ingredients sources for food enrichment. The present study was conducted to prepare a designer confection by incorporating different levels of pineapple powder and mango powder (2%, 4% and 6%) separately into the chhana base (chhana 95g + milk powder 5g) replacing chhana in formulation. Prepared samples were analysed for various parameters after coating with caramel. No significant (p>0.05) difference was recorded in the mean values of moisture, fat, protein, ash, lactose, cholesterol and carbohydrate content in all the mango powder and pineapple powder incorporated treatments as compared to control.

Evaluation on the physicochemical and sensory properties of wheat flour doughnuts substituted with millet flour was investigated. Different levels of millet flour (20, 30, 40 and 50%) and Wheat flour (80, 70, 60 and 50%). Chemical (moisture, fat, protein and ash), physical (specific volume, weight loss, spread ratio and yield) and sensory evaluation were conducted on all samples. Proximate analyses result indicated a higher percentage of protein and fat in control doughnut compared with substituted millet flour. Doughnut yield was ranged from 29.20-34.02%.

The present study was conducted to study the physico-chemical and functional properties of mithun (Bos frontalis) meat. Mithun were reared under semi-intensive system at ICARNational Research Centre on mithun farm, Medziphema, Nagaland, India, located between 25º54´30´´ North latitude and 93º44´15´´ East longitude, at an altitude range from 250-300 m mean sea level. Male mithun (age 4-7 years) with good body condition (score 5-6) were selected from the mithun farm which were maintained under similar housing, feeding and other managemental conditions.

A study was conducted using laboratory spray dryer (Lab plant SD- 05) to produce spraydried papaya leaf powders using three different maltodextrin concentrations (8%, 10% & 12%) as the encapsulating agent, three feed flow rates (350 mL/h, 475 mL/h and 600 mL/h) and three different inlet temperatures (130 oC, 140 oC and 150 oC). The spray-dried papaya leaf powders were analysed for moisture content, water activity, color, pH and total flavonoid content. Results demonstrated that as inlet air temperature increased, the moisture content, water activity and total flavonoid content decreased.
