Ethylene is involved in the regulation of the natural process of fruit pulp development and postharvest storage. The present study was carried out to determine the expression of eight genes encoding ethylene biosynthesis and signaling during development in Khasi mandarin (Citrus reticulata Blanco) fruit pulp as well as during postharvest storage in the fruit pulp (at 4 °C and 20 °C). Gibberellic acid (GA3 ) is known to improve internal fruit quality and to mediate various stress responses during postharvest fruit storage in species like citrus.

Fruit ripening in Prunus persica melting varieties involves several physiological changes that have a direct impact on the fruit organoleptic quality and storage potential. By studying the proteomic differences between the mesocarp of mature and ripe fruit, it would be possible to highlight critical molecular processes involved in the fruit ripening.

The invention of new chemicals or molecules, which may lead to or delay the ripening process of fruits, so that losses due to their perishable nature and short storage life can be easily handled. By doing this manipulation, we can avoid huge economic losses during the peak fruit season. It is prudent to use chemicals within safe limits so that they do not have a negative effect on a healthy human being. Certain chemicals increase the ripening process only if they are used in higher quantities but lead to a decline in the shelf life of treated fruits...

Postharvest rots of papaya reduce quality as well as quantity of papaya (Carica papaya L.). Due to firm texture, various microorganisms attack the fruit during ripening stages and cause losses. During the present investigation, effect of various weather factors on the progress of different rots was studied during the year 2019-20.

Ripening is the final stage in the life cycle of a fruit and it is an irreversible process. During ripening, fruits undergo various physiological and biochemical changes. These changes includes conversion of sugar from one form to another, textural changes, colour changes, change in aroma and flavor. Banana is one of the most easily available climacteric fruit which is distributed throughout the world. Since it is a climacteric fruit, its commercial ripening can be carried out in storage houses to obtain good flavor, proper texture and uniform peel colour.

The starch content and pectin content reached a maximum when the fruit was 14 weeks old and then gradually decreased. The tannin content decreased from fruit formation until fruit ripening. Through the research process, we found that banana achieves the best quality to harvest when fruits are 18 weeks old. The results of this study provide important data for the harvesting and storage of banana fruit.

The total organic acid content in papaya was relatively low and tends to decrease from young fruit stage to ripe fruit stage. Based on this study results, Taiwanese papaya fruit should be harvested after physiological maturity and before ripening completely (from 13 weeks of age to 15 weeks of age) to ensure the nutritional value of the fruit during storage.

Ethylene inhibitor compound 1-methylcyclopropene (1-MCP), sanitizer chlorine dioxide (ClO2) and polyhexamethylene guanidine (PHMG) were studied to know the postharvest behavior and storage life of banana fruits (cultivar Yelakki), harvested at second stage of its ripening. Banana fruits were pretreated with the above chemicals either singly or in combination and stored in corrugated fiber board boxes at ambient condition. The 1-MCP treatment had delayed the colour change of peel as well as fruit softening and extended t h e shelf life by suppressing the respiration.

Sapota (Achras zapota L.) is one of the tropical climacteric fruits preferred by the consumers due to its sweet taste and aroma. Fruits become ripe very quickly after harvesting due to sudden climacteric rise with high respiration rate and ethylene production. This quick ripening causes loosening the texture of fruit leads to softening of and spoilage. The short shelf life of the fruit is a marketing problem which is a major cause of huge postharvest loss of this fruit.

Postharvest ripening of apple (Malus x domestica) can be slowed down by low temperatures, and a combination of low O2 and high CO2 levels. While this maintains the quality of most fruit, occasionally storage disorders such as flesh browning can occur.

Fruit quality features resulting from ripening processes need to be preserved throughout storage for economical reasons. However, during this period several physiological disorders can occur, of which superficial scald is one of the most important, due to the development of large brown areas on the fruit skin surface.

Fruit quality depends on a series of biochemical events that modify appearance, flavour and texture throughout fruit development and ripening. Cell wall polysaccharide remodelling largely contributes to the elaboration of fleshy fruit texture.

Fresh produce has enormous potential to contribute in food and nutritional security. It also contributes with essential micronutrients in the daily diet. The indigenous fresh produce has a short shelf life and they get affected during storage and transportation due to microbial spoilage. Irradiation treatment could also be applied to mitigate this problem. Irradiation helps to eliminate various microorganisms, delay ripening, sprout inhibition and extension of shelf life of fresh produce. Cobalt-60 is the radioisotope used as a source of gamma radiations.
