The mathematical model for TTI has been simulated, which expressed the relationship of the colour advancement of TTI's with different temperature during the storage days. The good correlation (R=0.95) was found between the lnk versus RT-1 of the time-temperature indicators. From the investigation, resulted that activation energy of milk sample Ea is 28.7 kJ.

  • The influence of gamma irradiation on microbial load of different peanut varieties has been assessed. The healthy and mature kernels of peanut variety popular in saurastra region of India viz. GG-20 and TG-37A were naturally contaminated and conditioned with three initial moisture contents (6.0%, 8.5% and 11.0%), w.b. and packed in Poly Propylene (PP) bags of 50μ thickness. These samples were irradiated with different gamma irradiation dose (0 kGy, 2.5 kGy, 5.0 kGy, 7.5 kGy and 10.0 kGy) and stored at ambient temperature for three months.

  • The effect of rosemary extract and oregano extract was compared with Butylated Hydroxytoluene (BHT) which was incorporated in chitosan film and studied the quality and shelflife of Indian Mackerel (Rastrelliger kanagurta) steaks during ice storage. The quality of the product was analysed by using biochemical methods (peroxide value, free fatty acid, thiobarbituric acid, trimethyl amino nitrogen, total volatile basic nitrogen, pH), microbial methods (total plate count) and sensory quality.

  • The present study was carried out in Thiruvallur district of Tamil Nadu, India for the assessment of microbial quality of water sources available for livestock. A total of thirty water samples were collected viz., surface water sources such as lake and pond; municipal water supply; ground water sources such as open well and deep bore well. Microbial assessment was performed by using Presumptive Coliform Test (PCT) and Heterotrophic Plate Count (HPC). All the water samples were contaminated with coliforms.

  • This paper describes the first comprehensive study of the quality of commercial fish feeds in India with regard to microbiological indices. Quality of feed is an important parameter that has a direct impact on the outcome of any aquaculture system.   • Sugarcane juice was analysed for the two different treatments such as ohmic heating and conventional heating. The study analysis showed that the total plate count decreased with severity of ohmic heating treatment which reduced from 6.3 to 3.47 log cfu/ml for 90 C and 15 min treatment. So observing the PPO inactivation, colour change and microbial reduction of the treated samples into consideration, ohmic heating of sugarcane juice at 70C for 3 min holding time was found to be optimum.

  • The present investigation was aimed to study the proximate composition, quality parameters, and microbial analysis of microwave heated egg liquid samples obtained from exotic (white leg horn) and indigenous breed eggs (aseel). The microwave heating was done by maintaining different time levels (20, 40 and 60 S). By analyzing the data obtained during study of proximate composition, it was found that, microwave heating at 40 S was the best condition to pasteurize the egg liquid samples for storage.   • In India, fish consumers prefer three types of retail markets viz., local dry fish market, local fresh fish market and supermarket wherein no stringent food safety measures are followed and monitored. Hence, the present study was planned to analyze food safety parameters for different outlets by collecting equal numbers of fish samples from all three markets of Navi Mumbai region. Proximate composition, biochemical and microbiological parameters were evaluated. Antibiogram for the isolated Staphylococcus aureus and Escherichia coli from these fishes was studied.

  • Microbial contamination of the Operation theatres (OT‟s) continues to increase the prevalence of nosocomial infections. Our study evaluates the microbial contamination using various air sampling techniques in OT‟s and find a suitable technique to assess air quality. A total 151 air samples were collected from various OT‟s of our tertiary care centre.76 samples were collected by an active method using an air slit sampler and 75 samples were collected by passive settle plate method using 5% Sheep blood agar in 9cm petri-plates.

  • The objective of the current study was to identify the effect of reusing the alkali solution on thermoduric count in pasteurized milk. The study was carried out in a commercial Dairy Plant, where reusing of alkali solution is not practiced. In the present study, 28 samples each were collected from raw milk, pasteurized milk, and alkali solution before and after its use. Equivalent numbers of samples from surface swab of storage tank were also collected after cleaning procedure.

  • The present study was undertaken to evaluate the effect of different levels of Kumura (Benincasa hispida) on the quality characteristics of duck meat loaves. The Kumura was incorporated at three different levels viz., 5, 7.5 and 10 percent replacing lean meat in the formulation. The products were analysed for various physicochemical and sensory attributes. pH, crude protein, ether extract, and ash content of the products showed significantly decreasing trend with increasing levels of incorporation of Kumura.

  • The study was undertaken to compare the effect of tray and solar drying on the quality attributes of pineapple powder and its storability in different packaging materials. For the study, pineapple slices were first subjected to osmotic dehydration process using sugar syrup of 60 oBrix for 12 hours at room temperature. Powder was prepared after solar (using natural solar cabinet dryer) and tray drying (at 50, 60, 70 and 80 oC) of pineapple slices.

  • Fen liquor is typical of Chinese light-flavor liquor, which is fermented from sorghum with Fen-Daqu powder. Fen-Daqu is a saccharifying agent and fermentation starter obtained by natural solid-state fermentation under non-sterile conditions. The standard plate count and the online measurement methods were used to enumerate the surviving microorganisms, and measure the physiochemical in Fen-Daqu during the incubation.
