A review on anti-nutritional factors

This review is focuses on the anti-nutritional factors in plant metabolism and how they are beneficial to the plant defense system and harmful or beneficial to humans or animals and also how to reduce their quantity in materials. The anti-nutritional factors can be defined as those substances generated in natural food substances by the normal metabolism of species and by different mechanisms e.g. inactivation of some nutrients, diminution of the digestive process or metabolic utilization of feed, which exert effects contrary to optimum nutrition.
