This thesis reports research conducted to: Determine antioxidant capacity of dry and fresh calyxes of Hibiscus sabdariffa; Validate the HPLC method for analysis of the key antioxidant phytochemicals of Hibiscus sabdariffa; Quantify the amounts of key antioxidants in the extracts of Hibiscus sabdariffa calyxes.
