The objective of the present study was to find the changes in physicochemical properties, bioactive compounds, and antioxidant activity of acerola fruits under different cultivars (i.e., Brazilian acerola (Malpighia emarginata D.C) and sour acerola (Malpighia glabra L.)) and maturation stages (unripe, half-ripe, and ripe).

Results of this research showed that there was significant difference in vitamin C and total polyphenolic concentration and three popular varieties of acerola fruits from Tien Giang province. Concentrations of both vitamin C and polyphenolics reduced rapidly during storage at room temperature.
