Acetate starch

The high-, medium-, and low-amylose rice starches were isolated by the alkaline method and acetylated by using acetic anhydride for 10, 30, and 90 min of reaction. The degree of substitution (DS), the Fourier-transformed infrared spectroscopy (FTIR), the X-ray diffractograms, the thermal, morphological, and pasting properties, and the swelling power and solubility of native and acetylated starches were evaluated.

Different starch derivatives were evaluated as supports for attachment and recovery of macrophages (RAW 264.7 line). Gelatinized starch (G-St), acetate starch (Ac-St), carboxymethyl starch and aminoethyl starch were synthesized and characterized by FTIR, 1H NMR, SEM and static water contact angle.

Organocatalytic acetylation of pea starch was systematically optimized using tartaric acid as catalyst. The effect of the degree of substitution with alkanoyl (DSacyl) and tartaryl groups (DStar) on thermal and moisture resistivity, and film-forming properties was investigated. Pea starch with DSacyl from 0.03 to 2.8 was successfully developed at more efficient reaction rates than acetylated maize starch.

This study aimed to obtain appropriate technological parameters of acid-catalytic pyrolysis to synthesize resistant dextrin from rice starch. Hydrochloric acid has the highest catalytic efficiency of the four tested acids (acetic, citric, lactic, and hydrochloric). With HCl catalyst, pyrodextrins gained the content of indigestible fraction (IDF), water solubility, and whiteness 70.82 %, 96.73 %, and 64.27 %, respectively.
