The objective of this study is to obtain the protein content in NRL ≤ 50 µg/g of rubber and to evaluate the effect of oligoHEC treatment on the soluble protein content in NRL. The results show that oligoHEC at low concentration (0.25 %) effectively extracted protein molecules. Interestingly, the allergenic protein content in NRL decreased proportionally with the increase in oligoHEC concentration.

The liquid chromatography tandem mass spectrometry with electrospray ionization (ESI) source in multiple reactions monitoring (MRM) mode has been used to detect five allergen including milk, egg, peanut, soyabean, and walnut in milk, dairy products, and confectionery. The allergenic proteins from food matrices were extracted with an extraction buffer (50 mM of TRIS- saline, 2 M of urea, and 25 mM of DTT) and then enzymatically digested with trypsin to form peptides. The peptides were eventually detected on a LC-MS/MS Triple Quad 5500 system from AB SCIEX.

The extent of allergenicity of whey protein was revealed by inhibition ELISA using blood serum obtained from milk allergic infants. The effect of in vitro proteolysis on allergenicity and development of bitterness was studied using enzymes individually and in combination. Selective proteolysis of WPC was done to 3 and 5 per cent DH. A combination of enzymes was effective in reducing allergenicity at a lower DH. Sensory evaluation of hydrolysates was done to give bitterness scores.

Expansins are a family of proteins that catalyze pHdependent long-term extension of isolated plant cell walls. They are divided into two groups, a and b, the latter consisting of the grass group I pollen allergens and their vegetative homologs. Until now, only a small amount of information is available about tomato allergens. In the present study, a glycosylated allergen of tomato (Lycopersicon esculentum), Lyc e 2, was purified from tomato extract by a two-step FPLC method. The cDNA of two different isoforms of the protein, Lyc e 2.01 and Lyc e 2.02, was cloned into the bacterial expressionvector pET100D. The recombinant proteinswere purified by electroelution and refolded.
