  • The sweet orange based RTS blends using beet root and carrot juice were evaluated for their quality, acceptability throughout the period of storage. TSS (oB) was significantly increased with increase in storage period, in all sweet orange based RTS blends. T8 (S2B2) (15% sugar+5% beet root) recorded significantly highest TSS content. pH decreased with increase in storage period. Maximum pH was observed in T8 (S2B2) (15% sugar+5% beet root). There was increase in titratable acidity throughout the storage period. T8 (S2B2) (15% sugar+5% beet root) was found significantly higher.

  • Drying kinetics of amla- beet root shreds in tray dryer was studied at 55, 65 and 75oC air temperatures. Drying of shreds occurred completely in falling rate period. Four thin layer drying models were fitted to the experimental moisture ratio data. Among the mathematical models investigated, the logarithmic model satisfactorily described the drying behaviour of shreds with high r2 values.

  • Screening of antimicrobial compound from waste and low cost plant material would be better alternative material for synthetic food preservatives. Hence, in the present study, beetroot peel and whole radish was chosen. Beet root peel extract (BPE) and Whole radish extract (WRE) was prepared using water and screened for the antibacterial compound against various food borne pathogen using modified well diffusion assay. Then the minimum inhibitory concentration (MIC) and minimum bactericidal concentration (MBC) level was identified for the various food pathogens.
