Production of dried milk powders by using a novel technique of spray drying is to enhance the storage life of milk, making it convenient to reconstitute without much loss of nutrients. A study was conducted to develop a ready to reconstitute milk beverage by using the spray drying technology with optimum nutritional parameters.

The present investigation was carried out to develop the weaning food with incorporation of horse gram malt and evaluated for proximate, rheological, functional and sensory characteristics. The horse gram malt was incorporated at the concentration 0 (Control), 10 (WH1), 20 (WH2) and 30% (WH3) substitute with rice flour (90, 80, 70 and 60%) further added carrot powder (5%) and skim milk powder (5%) for enrichment. On the basis of sensory evaluation, the WH2 sample was found to be most acceptable with respect to all sensory parameters over other samples.

In the recent time, pumpkin has got industrial importance with the development of pulp powder as a nutraceutical supplement to Vitamin A requirement. Pumpkin is cheaper source of Vitamin A when compared to carrot which necessitates specific climatic requirement for its production and high productivity per unit area. An experiment was conducted at the Department of Vegetable Crops, Horticulture College and Research Institute, Tamil Nadu Agricultural University, Coimbatore to find out suitable pumpkin genotype for earliness, high yield and quality.

Carrot is one of the important root vegetables rich in bioactive compounds like carotenoids and dietary fibers with appreciable levels of several other functional component shaving significant health-promoting properties. The consumption of carrot and its products is increasing steadily due to its recognition as an important source of natural antioxidants having anticancer activity. The purpose of this paper is to develop biscuit incorporated with carrot powder to enhance the nutritional value of it.

Fortification of food with micronutrients is considered a valid technology and strategy to provide adequate levels of the respective nutrients in the diet, and where the fortified food is highly accessible to the target population. Carrot is a commonly use as vegetable for table purpose and industrial utilization of carrot for the preparation of products is very limited. Dehydrated carrot, carrot powder are some of the commercial carrot products , but not lucarative. Carrot has the most wanted nutrient b carotene which is a potential ingredient to alleviate vitamin A deficiency in children.

The present study was carried out to formulate instant soup mixes using vegetable leaf powders from unconventional greens namely turnip (Brassica rapa), radish (Raphanus sativus), cauliflower (Brassica oleracea) and carrot (Daucus carota) and to measure their antioxidant activity along with organoleptic characteristic. The two formulations of instant soup mix which had been enriched with either turnip leaf powder or radish leaf powder at a 5% level had higher antioxidant activity than the formulation where no vegetable leaf powder had been incorporated i.e. 39.27 vs 41.58 and 44.

Experiments were conducted to development, quality evaluation and storage stability of multi- flour noodles made from wheat flour, soya bean flour, carrot powder, mushroom flour and apple pomace powder. The noodles were formulated by taking different proportion of multi-flours in the ratio of (T100) 100:0:0:0:0, (T90) 90:2.5:2.5:2.5:2.5, (T80) 80:5.0:5.0:5.0:5.0, (T70) 70:7.5:7.5:7.5:7.5, (T60) 60:10:10:10:10 and (T50) 50:12.5:12.5:12.5:12.5 respectively. Wheat flour of the ratio of 100:0:0:0:0 was considered as control.
