Fruit and vegetables (F&V) are living tissues and highly perishable products needing optimal post-harvest technologies in order to maintain their storage stability and extend shelf life. The experiment was conducted in the winter months. Dried tomato slices ground to obtain powder. Dried powder was analyzed for its proximate composition that is moisture, crude fat, crude protein, crude fiber, ash, carbohydrates and energy. Nutritional characteristics of the dried powders were analyzed for proximate composition along with fresh fruit on dry weight basis.

A ready to eat thermally processed rice pulav were developed using retort processing. The rice pulav processing parameters like temperature and time 115 to 125°C for 15 to 25 min respectively on the basis of descriptive sensory evaluation. The processing temperature and time of 117.67°C for 22.4 min was considered to be the most appropriate for retorting the rice pulav with overall acceptability of 7.46 and desirability 0.79. The developed product was subjected to various chemical, microbial and sensory analyses during storage for 180 days at ambient temperature (17 -37°C).

The study was undertaken to standardize a shelf-stable ready-to-eat pepper chicken using broiler meat by retort pouch processing. Three experiments were conducted, in the first experiment the recipe was standardized (pilot scale study) on the basis of sensory evaluation and in second experiment retort pouch processing temperature (F0 value) was determined based on references, commercial sterility test, visual observation, sensory evaluation and preliminary trials. The come up percentage was 27.27 and the F0 value was 7.2 minutes.

Pre-harvest foliar spray of chemicals and mulching is an important technique to extend the self-life, marketability as well as fruit quality of mango. Keeping in view the experiment was conducted under the experimental area of BAU, Sabour, Bhagalpur, Bihar, India during the two successive seasons of 2012 and 2013. Thirty-year-old mango cv. Langra trees were used with eight treatments along with polythene mulching (during October) and per-harvest chemicals were sprayed at 30 days before harvesting of fruits of CaCl2 6H2O @ 2, 4 and 6%,Ca (No3)2@ 4%, K2SO4@ 1.0% and borax @ 1.

The CII protein of bacteriophagek, which activates the synthesis of thekrepressor, plays a key role in the lysis– lysogeny switch. CII has a small in vivo half-life due to its proteolytic susceptibility, and this instability is a key com-ponent for its regulatory role. The structural basis of this instability is not known.
