Quinoa (Chenopodium quinoa Willd.) is a pseudo cereal crop, which is considered a new alternative crop due to its high nutritional value and tolerance to environmental stresses. Its seeds are rich in proteins and amino acids (e.g., lysine, threonine, and methionine) that are deficient in other pseudo-cereal crops. It also contains essential fatty acids, such as linoleic, and alpha-linolenic acids, and high quantities of vitamins, e.g., riboflavin (B2), and tocopherol (vitamin E), and inorganic nutrients.

The influence of soil moisture on the infection, hyphal development and uptake of P of a VA mycorrhizal fungus Glomus fasciculatum in Quinoa was studied at four different moisture levels (-0.2; -0.6; -1.2 and -2.4 MPa). Maximum increase in dry weight was observed at -0.2 MPa level. There was a proportionate increase in total P content in shoot and root of a plant at decreased moisture levels.

Gluten free (GF) biscuits were prepared from both the grains, by employing hydrocolloids and the sensory, physico- chemical and nutritional properties were assessed.
