Changes in microbial activity was studied during ambient storage of sheep milk yoghurt. The starter cultures were one pure stain of Yoghurt YH-3 and another mixed culture of Steptococcus salivarious var. thermophilus-YH-S + Lactobacillus delbrueckii var. bulgaricus (1:1). The rate of inoculum in the preparation of sheep milk yoghurt was 3% in both the types of preparation. The acid production increase with the period of storage for both the types of preparation.

The shelf-life of fresh sugarcane juice is limited due to enzymatic browning and microbial growth. Browning is caused by polyphenol oxidase (PPO) enzyme and the microbial spoilage occurs mainly due to yeasts and moulds, aerobic bacteria and coliforms. High pressure processing is one of the novel food preservation methods used as an alternative to thermal treatment.

Wet cured pork hams inoculated with Lactobacillus acidophilus and Micrococcus varians483 had higher total viable count, lactic acid bacteria and Micrococcaceae counts and lower Enterobacteriaceae and coliform counts. pH of the inoculated hams was lower. ERV, WHC and aw decreased significantly with storage period.

The microbial quality of unbranded groundnut oil sold in Mile 1 and Mile 3 Markets in Diobu area of Port Harcourt, Rivers State was investigated. Five samples of different unbranded groundnut oil bought from both markets were used for the microbiological analysis. The isolation and enumeration of total aerobic heterotrophic bacteria, total fungi, and total coliform bacteria counts was done with nutrient agar, potato dextrose agar and MacConkey agar medium using standard microbiological techniques.

The milk samples (Raw and Boiled) were collected from various vendors of Hoshiarpur and Ludhiana district. Three different samples of Pasteurized milk samples were taken from the market. These samples were evaluated for their quality by determining Standard Plate Count (SPC) and Coliform count. The bacterial colonies ranged from 0.7×104 cfu/ml to 6×106 cfu/ml in boiled milk. Methylene Blue reduction test (MBRT) had also been performed to check microbial quality of the samples and Sample 1 (both raw and boiled) was reported to be poor.

The present study was carried out in Thiruvallur district of Tamil Nadu, India for the assessment of microbial quality of water sources available for livestock. A total of thirty water samples were collected viz., surface water sources such as lake and pond; municipal water supply; ground water sources such as open well and deep bore well. Microbial assessment was performed by using Presumptive Coliform Test (PCT) and Heterotrophic Plate Count (HPC). All the water samples were contaminated with coliforms.

This paper describes the first comprehensive study of the quality of commercial fish feeds in India with regard to microbiological indices. Quality of feed is an important parameter that has a direct impact on the outcome of any aquaculture system. A study was conducted to evaluate the proximate composition, textural & colour profile and microbiological quality of duck meat patties incorporated with different levels of Black Gram Flour (BGF). Three formulations were prepared with the incorporation of BGF at different levels: 5% (T1), 10% (T2), and 15% (T3) and compared with the control (CT) sample prepared without BGF.
