Ebook "The microbiological safety of low water activity foods and spices" provides an understanding of the microbial challenges to the safety of low aw foods, and a historic backdrop to the paradigm shift now highlighting low aw foods as vehicles for foodborne pathogens. Up-to-date facts and figures of foodborne illness outbreaks and product recalls are included. Special attention is given to the uncanny ability of Salmonella to persist under dry conditions in food processing plants and foods.

Strains of Lactobacillus paracasei are present in many diverse environments, including dairy and plant materials and the intestinal tracts of humans and animals. Their adaptation to various niches is correlated to intra-species diversity at the genomic and metabolic level. In this study, we compared the genome sequences of three L. paracasei strains isolated from mature Cheddar cheeses, two of which (DPC4206 and DPC4536) shared the same genomic fingerprint by PFGE, but demonstrated varying metabolic capabilities.

Lactococcus lactis FM03P carries 12 plasmids important for its adaptation to the dairy environment. Some of the plasmids were easily lost demonstrating that propagation outside the dairy environment should be minimised when studying dairy isolates of L. lactis.

Leptospirosis is an acute, bacterial, anthropozoonotic disease. Some occupations are highrisk group occupations for Leptospirosis e.g. field veterinarian, animal handler, dairy workers, slaughterhouse workers, rice field workers, sugar-cane field workers, sewage workers, and laboratory personnel. Poultry is known to be resistant to Leptospira spp. infection but the feed stuff available at poultry farms which are mostly located in the field attracts wild rodents. So it is important to study the prevalence of Leptospira spp.

The waste water discharge form industries are major source of pollution and affect the ecosystem (Anikwe and Nwobodo, 2006). The degradation of environment results by the adverse effect of industrial waste on living organism and agriculture (Danalewich et al., 1998). Keeping all these points into consideration the study has been done to study physico – chemical properties of wastewater generated from dairy industry.

Microorganisms produce certain commercially important secondary metabolites like antibiotics, carotenoid pigments, toxins and so on, some of which are of commercial importance. Carotenoid is a group of pigment and its production is a natural phenomenon in case of certain microorganisms. Yeast is a unicellular eukaryotic organism occurring in soil, air, feed and fodder of dairy farm environment. Among yeast, Rhodotorula sp. produces both extra and intracellular carotenoid pigments.

The present study was designed to study the prevalence and characterization of shiga toxin producing Escherichia coli from dairy animals, water samples in dairy farms and from humans who were in close contact with animals. A total of 508 faecal samples from dairy animals, 4 water samples from dairy farms and 28 Human faecal samples, who were in close contact with animals were subjected to cultural and biochemical tests for confirmation of E. coli.

Bacteriocins and Bacteriocin like Inhibitory Substance (BLIS) are ribosomal products exhibiting antimicrobial activity. The present study aimed to screen for production of antimicrobial agents from soil bacteria of dairy environment. Borer was used to dig soil and collected in sterile plastic bags. Isolation was done on tyrosine agar. To exclude non spore formers the soil suspension, was heated at 80ºC.

Milk is known to carrier both pathogens as well as spoilage microorganism. This results in the economic loss of producers/processors/consumers and can pose a serious public health concern. Spoilage microorganisms group can degrade milk components, creating negative sensory attributes, decreasing processed product shelf life and adversely affecting fermented dairy product yield. Some microorganisms are beneficial and carrying out desirable fermentation in milk (prevent spoilage through fermentation).

Metritis and endometritis are the very common postpartum uterine infections that results into infertility in dairy cattle, production loss and economical losses to the farmer. As postpartum uterus favors bacterial growth so it is frequently found in almost of unhygienic environment reared animals. Breaching of birth canal during dystocia, retention of placenta, wet environment during winter season and immunosuppression due to many reasons are the risk factors for the bacteria invasion to uterus.

Escherichia coli is responsible for a wide variety of intestinal infections, showing increasing antimicrobial resistance. Antimicrobials resistance in biofilm-forming isolates contributes to bacterial persistence which may lead major public health concern and treatment problems. The aim of this study was to study the antimicrobial resistance profile of E. coli with reference to biofilm production to study the possible relationship among E. coli isolates from cattle and their farm environment. Out of 64 samples 34 (53.12%) samples were confirmed as E. coli, whereas 16 (47.
