High concentrate (HC) diet-induced oxidative stress causes gut epithelial damages associated with apoptosis. Selenium (Se) being an integral component of glutathione peroxidase (GSH-Px) plays an important role in antioxidant defense system. Therefore, increasing dietary Se level would alleviate HC diet-induced injuries in gut mucosa.

Dietary Se as an antioxidant element affects the immune system and hematological status in animals. Dietary selenium supplementation in the poultry has been regularly practiced using the inorganic and organic forms to enhance the growth and antioxidant defence system. These forms have the limitations of having narrow margin of safety and non specific binding to tissue proteins, hence an alternate form of selenium i.e. nano selenium having greater potential as poultry and livestock feed supplement with higher bioavailability, higher margin of safety and seven fold lower acute toxicity was prepared using starch, ascorbic acid and bovine serum albumin.

An experiment was designed to investigate the effects of supplementing inorganic, organic and nano selenium on growth performance and antioxidant status of Giriraja chicken reared in deep litter system up to eight weeks of age. A total of 384 day old straight run chicks were equally divided into eight treatment groups with four replicates each. Control group (T1) was fed with basal broiler diet (NRC, 1994) without added selenium supplementation in premix.

One hundred and forty four numbers of 40th week-old coloured broiler breeder hens were randomly distributed into 6 dietary treatments with three replicates with 8 chicks per replicate. The dietary treatments were: T1 (Control group): Basal diet; T2: Basal diet with 0.3 ppm of inorganic Se (SS-0.3); T3: Basal diet with 0.6 ppm inorganic selenium (SS0.6); T4: Basal diet with 0.3 ppm of organic selenium (SY-0.3); T5: Basal diet with 0.6 ppm of organic selenium (SY-0.6); and T6: Basal diet with 0.3ppm sodium selenite+0.3 ppm selenium yeast (SS-0.3+SY-0.3).

Preparations derived from Lentinula edodes (Berk.) Pegl. mycelium are worldwide used as dietary supplements containing compounds active as immune system enhancers, demonstrating chemopreventive and anticancer activity. L. edodes mycelium enriched with organic forms of selenium like selenized yeast possess putative, higher cancer preventive properties. The objective of this study was to test the effect of enrichment in selenium on antioxidant, reducing and free radical scavenging activity of water and alcohol extracts from mycelium of L. edodes (Berk.).

Selenium Selenium, in the form of selenocysteine, is a component of the enzyme glutathione peroxidase, which serves to protect proteins, cell membranes, lipids, and nucleic acids from oxidant molecules. As such, selenium is being actively studied as a chemopreventive agent against certain cancers, such as prostate. Selenocysteine is also found in the deiodinase enzymes, which mediate the deiodination of thyroxine to triiodothyronine (Chap. 335).
