Flaxseed oil

The present study aims to evaluate the suitability of flaxseed oil (rich plant source of long chain omega-3 polyunsaturated fatty acid) as healthy oil in formulation of therapeutic fat spread. Eight fat spread samples containing 20%, 40%, 60%, 80% total blend fat were prepared.

Flaxseed oil is characterized by high content of essential polyunsaturated fatty acids (PUFA) promoted as a human dietary supplement protecting against atherosclerosis. The disadvantage of the high PUFA content in flax oil is high susceptibility to oxidation, which can result in carcinogenic compound formation.

CVD is a major public health problem. High blood pressure and circulating LDL levels are major risk factors for promoting atherosclerosis, ischemic heart disease or stroke. PUFA act as substrates for eicosanoid formation. Eicosanoids formed from omega 3 are anti- inflammatory in nature and possess cardioprotective effects through various mechanisms with DHA being most potent followed by EPA and ALA in preventing cardiovascular disease. But conversion of ALA to EPA and DHA is less efficient.

Full fat flaxseed flour was supplemented with wheat flour @ 5, 10, 15, 20,25 and 30%. Cookies were prepared from composite flours. Cookies prepared without flaxseed flour were kept as control. The mean quality score of the cookies decreased with the increase in the level of the flaxseed flour supplementation.
