The researchers used descriptive survey design and the population of the study was some selected food vendors in North East Zone, with population of three hundred and sixty (360) where sixty (60) of them were sampled for the study through simple random sampling technique, the instrument used for the collection of data for the study was selfstructured questionnaire and the data collected were analyzed using frequency counts and percentage.

In this study, the crude polysaccharides from fruiting bodies of Vietnamese Lingzhi collected from the South of Vietnam were analyzed and compared based on monitoring the absorbance of the samples in 490 nm, as well as enzymatic, microwave and ultrasonic methods with different surveyed parameters, such as: concentration of enzyme, microwave frequencies, extraction time, extraction temperature, ratio of sample and water.

This study has adopted a systematic approach to identify the extent to which 20 kHz ultrasound affects the particle size and solubility of different protein solutions containing 4%, 7% and 10% whey proteins, caseins or a mixture at a range of energy densities (15-400 J/mL) and various pH (4.0-9.0). Methods: A Cross-sectional survey using methods of 24-hour recall records of food intake (24-FR, the reference group) in 300 households of three commune general populations that have 1,334 persons.
