The accumulation of soluble sugars, especially sucrose, in mature Vietnamese golden melon, has been reported to be the determining factor of the sweetness of fruits. The gene of SPS2 has been shown to be mainly involved in the metabolic signal pathway as those for the synthesis of sucrose.

Fungal fruiting bodies are complex three-dimensional structures that are formed to protect and disperse the sexual spores. Their morphogenesis requires the concerted action of numerous genes; however, at the molecular level, the spatio-temporal sequence of events leading to the mature fruiting body is largely unknown.

Proteases represent one of the most abundant classes of enzymes in eukaryotes and are known to play key roles in many biological processes in plants. However, little is known about their functions in fruit ripening and disease resistance, which are unique to flowering plants and required for seed maturation and dispersal.

The collapsed outer layer of the pericarp in mature fruit could reshaped and regain turgor pressure after soaking in water, this may help for rapid germination. Although quinoa has thin seed coat layers however it have thick cell walls could maintain the moisture of embryo and perisperm and increase seed hardness as response to the arid habitats.

The content of water-soluble vitamins, trans-resveratrol, total phenolic content and antioxidant capacity of the jujube fruits decreased during the maturation. The trans-resveratrol content of the jujube fruits was investigated for the first time and no trans-resveratrol content could be detected at red maturation stage. The major organic acid and sugar at the red maturation stage were found to be malic acid and sucrose, respectively

Fruit ripening in Prunus persica melting varieties involves several physiological changes that have a direct impact on the fruit organoleptic quality and storage potential. By studying the proteomic differences between the mesocarp of mature and ripe fruit, it would be possible to highlight critical molecular processes involved in the fruit ripening.

Being a promising tropical woody oilseed crop, the evergreen and recurrent plants of Sacha Inchi (Plukenetia volubilis L.) has complex phenology and source–sink interactions. Carbon source–sink manipulations with control and two treatments (reduce source, ca. 10% mature leaf pruning; reduce sink, 10% fruitlet thinning) were conducted on 2.5-year-old field-grown P. volubilis plantation during the early-wet season in a seasonal tropical area.

The reproductive phenology of perennial plants in temperate climates is largely conditioned by the duration of bud dormancy, and fruit developmental processes. Bud dormancy release and bud break depends on the perception of cumulative chilling and heat during the bud development.

The ripe fruit contain approximately 79.50 per cent moisture, 15.25 per cent dry matter, 3.20 per cent crude fibre and little amount of ash. The TSS varies from 10.5-14.5 per cent. Several volatile compounds including hydrocarbons, alcohol and carbonyls have been found to be responsible for the characteristic flavor of guava. The decrease in astringency with advancement of maturity is ascribed to polymerization of leuco-anthocyanins.

Bananas are among the world‟s leading food crops, after rice, wheat and maize. Banana is a dessert fruit for millions and it contains nearly all the essential nutrients. Banana accounts for 31.7 per cent of the total fruit production in India. It has short shelf life of 6- 10 days under tropical condition. Converting this perishable fresh fruit into shelf stable high value products like powder flour will be of immense value. The present study was undertaken to develop health mix from `Chakkai banana variety.
