Milk and colostrum contain a great number of bioactive components influencing the human health such as weight management and hypertension. Furthermore, milk components, such as calcium and proteins and new structures created by reaction of these with other components have a great influence on the technological properties of the milk, and might also influence digestion and health properties. Since Goat and sheep milk is richer in such milk components compared to bovine milk, it is justifiable to consider goat and sheep milk to be natural functional milks (Assis et al., 2016).

Changes in microbial activity was studied during ambient storage of sheep milk yoghurt. The starter cultures were one pure stain of Yoghurt YH-3 and another mixed culture of Steptococcus salivarious var. thermophilus-YH-S + Lactobacillus delbrueckii var. bulgaricus (1:1). The rate of inoculum in the preparation of sheep milk yoghurt was 3% in both the types of preparation. The acid production increase with the period of storage for both the types of preparation.

Goats are earliest domesticated animals. Number of the individuals are maintained them either as a source of the income or as a hobby. Mostly goats are maintained as a source of the milk and were milked even before cows. Goat is also called as “Cow of poor man”. Many scientists focused on the functional properties of the goat milk along with sheep milk. It is concluded that, these milks have not only high nutritional value but also therapeutic value and dietary characteristics.

Dahi was prepared using cow and caprine milk and the experiment was carried out to assess the quality Dahi during storage from two distinct species of milk. The cow samples were collected from Dairy farm, KVAFSU, Hebbal, Bengaluru and caprine milk samples were collected from Sinchana goat and sheep farm, Marenahalli village (Bengaluru Rural District) and Yashodhavana Goat Farm (Mysuru) were used. The Dahi prepared were incorporated with different level of Bioactive peptides (BAPs) to studied their antibacterial and antioxidative role during storage as a index for storage stability.

Sheep and goat brucellosis caused by Brucella melitensis, one of the most virulent Brucella species accounting for economic losses through abortion, stillbirths, reduction of milk yield and infertility. Disease has wide socioeconomic impact, in countries where, livestock sector is the major source of rural income. Early diagnosis is essential to minimise the spread of the disease besides public health importance. Goat milk has higher Somatic Cell Count (SCC) and the ability to correctly interpret somatic cell counts in goat depends on an understanding of the various factors which may affect the number of somatic cells. The present study was carried out to determine the effect of non-genetic factors on Sub Clinical Mastitis (SCM) and to investigate the relationships between these factors with Somatic cell count (SCC) in 105 Sirohi goats raised at Sheep breeding farm Fatehpur, Sikar in Rajasthan, India.

Organic milk production systems rely on ecologically based practices that virtually prohibit the use of antibiotics and hormones in the cow herd and the use of synthetic chemicals in the production of cattle feed. Organic milk production systems also attempt to accommodate the animals’ natural nutritional and behavioral requirements, for example ensuring that dairy cows have access to pasture (Greene and Kremen).

When I was invited by InTech Open Access Publisher, to author/edit the books on Milk Production, I immediately realized both the importance of such books that are concerned with milk production. The difficulty of assembling such books rests on the fact that lactation is a complex process and the vast amount of research, fundamental and applied has been carried out. Milk production is not concerned only with the cow. The sense of milk production is concerned worldwide with the milk of cows, sheep, goats and buffaloes.
