Ebook "Bioactive components of milk (Advances in experimental medicine and biology, Volume 606)" is divided into four parts. The first part focuses on bioactive milk lipid components, which very widely among mammalian species. The second part describes different aspects of biological active colostrums and milk proteins and their derivatives, with special concern on species specific effects.

A new fermented product of soybean milk (designated “PS-B1”) was prepared by a four-step complex culture using 16 lactic acid bacteria of human intestinal origin. Because living lactic acid bacteria are completely removed by filtration of the fermented product, PS-B1 can be classified as a biogenic food.

Accessory breast(s) is defined as the presence of more than two breasts with or without a nipple and areola in human beings. It may occur anywhere along the primitive embryonic milk lines, which extend from the axilla to the groin. Accessory breast tissue can potentially undergo the same physiological and pathological processes as the normally located breast, including lactational change, fibroadenoma, and carcinoma.

In the Western world bovine milk products are an important protein source in human diet. The major proteins in bovine milk are the four caseins (CN), αS1-, αS2-, β-, and k-CN and the two whey proteins, β-LG and α-LA. It has been shown that both the amount of specific CN and their isoforms including post-translational modifications (PTM) influence technological properties of milk.

Bovine milk provides important minerals, essential for human nutrition and dairy product quality. For changing the mineral composition of the milk to improve dietary needs in human nutrition and technological properties of milk, a thorough understanding of the genetics underlying milk mineral contents is important.

Fatty acid desaturase 1 (FADS1) and 2 (FADS2) genes code respectively for the enzymes delta-5 and delta-6 desaturases which are rate limiting enzymes in the synthesis of polyunsaturated omega-3 and omega-6 fatty acids (FAs). Omega-3 and-6 FAs as well as conjugated linoleic acid (CLA) are present in bovine milk and have demonstrated positive health effects in humans.

Humans and animals have formed powerful bonds across cultures and throughout history, in real life and in storytelling. Forming relationships with animals has been a fundamental part of the human experience around the globe and literature is filled with descriptions and imaginings of human and animal interaction. Human animal relationships appear in a wide range of literary genres, and the nature of the bonds formed between human and animal characters in literature is intriguingly diverse.

Azerbaijan currently ranks thirteenth in global incidence of human brucellosis, with an estimated annual incidence through 2000 at over 50 cases per million. Brucella melitensis has been isolated from patients and is thought to have been acquired through contact with small ruminants or as a foodborne infection.

In the current study, five Lactobacillus gasseri MA strains from human breast milk were investigated for their usage potentials in aquaculture and seafood products as probiotic and bio-protective. The strains were tested for their susceptibilities to various clinical antibiotics used in fish cultivation, antimicrobial activities against seven fish pathogens, alpha-amylase enzyme activities, and susceptibilities to sodium benzoate which used as a food preservative.

After oral administration, probiotic lactobacilli meet a number of protection systems in the human body, such as exposure to gastric, pancreatic, and small intestinal juices. Overcoming these detrimental barriers allows living bacteria to adhere to the intestinal epithelium and permanently colonize the gastrointestinal tract (GIT), providing health benefits to the host. Based on this, the transit tolerance of 25 candidate probiotic lactobacilli from katak, yoghurt, and white-brined and yellow cheese to simulated bile and small intestinal juices of variable pH was investigated.

The abuse of antibiotics leads to antibiotic resistance which may seriously threaten human and animal welfare, and growing levels of antibiotics or antibiotic-resistant bacteria in the environment increase the numbers of drug-resistant infection outbreaks. Therefore, many detection methods have been being developed to quickly assess antibiotic content and its residues in foods.
