The growth of baker's yeast Saccharomyces cerevisiae in medium containing sucrose requires a high level of extracellular invertase enzyme activity. We also found that industrial yeast strains are more sensitive to hyperosmotic stress than the laboratory strains of S. cerevisiae used in this study.

Kluyveromyces lactis and Kluyveromyces marxianus are industrial yeasts widely used in the production of the β-galactosidase enzyme. Biosynthesis of β-galactosidase is controlled by glucose repression. In this study it was demonstrated that the derepression of β-galactosidase biosynthesis in these yeast strains is inhibited by high osmotic stress.

We recently cloned a novel osmotic stress transcription factor 1 (OSTF1) from gills of euryhaline tilapia (Oreochromis mossambicus) and demonstra-ted that acute hyperosmotic stress transiently increases OSTF1 mRNA and protein abundance [Fiol DF, Ku¨ltz D (2005) Proc Natl Acad Sci USA 102, 927–932].
