It has been suggested that iron fortification could reduce dietary anaemia in women of childbearing age and preschool children in Mozambique, where cassava root, the staple carbohydrate, is deficient in iron. Mahewu is a traditional non-alcoholic, beverage made from fermented cassava roots (Manihot esculenta, Crantz).

Effects of Saccharomyces cerevisiae fermentation products (SCFP) on rumen microbiota were determined in vitro and in vivo under a high and a depressed pH. The in vitro trial determined the effects of Original XPC and NutriTek (Diamond V, Cedar Rapids, IA) at doses of 1.67 and 2.33 g/L, respectively, on the abundances of rumen bacteria under a high pH (> 6.3) and a depressed pH (5.8–6.0) using quantitative PCR (qPCR).

The crude protein increased from 3.60% to 11.80% when S. cerevisiae was used as biological additive material after incubation of 7 days at 28 C. Cellulose, hemicellulose and lignin showed gradual decrease with increasing incubation time of the fermentation process, however, in vitro disappearance increased.

In the present study, digestion and fermentation (in vitro) of chickpea hull (CHPS) polysaccharides were analyzed, and CHPS effects were determined on gut microbes by using high-throughput sequencing technology. The results revealed that saliva, artificial gastric, and small intestinal juices had no effect on CHPS, but after fermentation of CHPS by human gut microbiota the molecular weight, reducing sugar and carbohydrate content decreased significantly.

After oral administration, probiotic lactobacilli meet a number of protection systems in the human body, such as exposure to gastric, pancreatic, and small intestinal juices. Overcoming these detrimental barriers allows living bacteria to adhere to the intestinal epithelium and permanently colonize the gastrointestinal tract (GIT), providing health benefits to the host. Based on this, the transit tolerance of 25 candidate probiotic lactobacilli from katak, yoghurt, and white-brined and yellow cheese to simulated bile and small intestinal juices of variable pH was investigated.

The present results reported that leaves and twigs of AN contained higher levels of CP, FAT, and NFE than in AH treatments. They had significant (P< 0.05) effects on dry matter intake (DMI), lambs' body weight, and digestibility. In contrast, Degradability, higher gas production and in vitro fermentation range of BH to that these substrates had a higher nutritional value than the other browse species. Lambs receiving BH consumed (P< 0.05)more feed compared to those received AH or AN.

The main objective of the present study was to investigate the effect of incorporation of graded levels of RDDGS in the concentrate mixtures on in vitro nutrient digestibility and rumen fermentation pattern using buffalo inoculum. Soybean meal (SBM) based conventional concentrate mixture was prepared and SBM in the concentrate mixture was replaced by RDDG at graded levels of 25, 50, 75 and 100 per cent on N basis. The nutritional worth of various concentrate mixtures was assessed by in vitro gas production technique.

The present study was carried out to evolve a safe and strategic supplementation to rice gruel by synchronizing nutrient delivery in the rumen for maximum microbial production. Three in vitro trials were conducted to study the rumen fermentation characteristics of nonprotein nitrogen (NPN) and sulphur sources supplementation to rice gruel with basal diet (Bajra x Napier grass, CO4). Urea and diammonium phosphate (DAP) were used as NPN sources, while copper sulphate and sodium sulphate were used as sulphur sources.

The use of yeast culture as a dietary supplement has been suggested as a useful tool to stabilize ruminal fermentation. A study was conducted to explore the scope of rabbit gut transmitted (RGT) S. cerevisiae as probiotic and prebiotic (Synbiotic) by in vitro. The rabbit gut transmitted S. cerevisiae was isolated from the faeces of rabbits as follows.

Lactic acid bacteria were isolated from naturally fermenting fruit based fermented food (panchamirtham), by using specific medium. Totally twelve LAB were isolated from different panchamirtham samples. Among the bacterial isolates potential lactic acid bacteria were identified efficacy against four different human pathogens viz., Pseudomonas aeruginosa, Escherichia coli, Staphylococcus aureus and Listeria monocytogens. The bacterial isolates were screened for their ability to produce bacteriocins and inhibit five pathogenic organisms.
