The underutilized indigenous vegetables are rich source of, protein, essential vitamins, micronutrients and other phytonutrients etc. and many of these vegetables have a better nutritional value compared to other known vegetables like tomato or cabbage. But the potential of these vegetables are not explored commercially. Various underutilized vegetables like Water spinach, Common Purslane, Indian spinach, tree bean, winged bean etc. are embedded with vitamins, amino acids, minerals, protein, dietary fibre etc.

Fried snacks are popular among young Indian population. An experiment was conducted for nutritional quality evaluation of the fried cowpea snacks. Boondi, sev, enrobed nuts and fried nuts were formulated by using cowpea. These products were evaluated for proximate composition, mineral content i.e. iron, calcium and free radical scavenging activity.

More than sixty million Indians reside in endemic areas of fluorosis and are at risk of developing fluorosis in 200 districts from 20 states of India. Keeping in mind the severity of fluoride (F) problems, this study is an effort to investigate the effect of F contaminated soils on germination, plant growth and physiology of important pulse, mung bean (Vigna radiata) and green leafy vegetable spinach (Spinacia oleracea). This study was carried out with completely randomized block design under controlled environmental conditions in green house.

Seed health evaluation of different varieties of Indian bean by incubation method (Roll paper towel)
Five varieties of Indian bean and one local variety were taken in the investigation to assess the seed health evaluation by roll paper towel method. The seeds were placed on moist paper towel at equidistance and covered with another moist paper towel and rolled carefully without disturbing the already arranged seeds.

Cluster bean (Cyamopsis tetragonoloba L.) is an important legume crop of India which can thrive well in adverse conditions. Despite of the fact that P is abundant in the soil it cannot be assessed by plants. Bacteria like rhizobium isolated from root nodules have potential to solublize the insoluble phosphorus. Thus, it plays a vital role in enhancing the phosphorus availability and overcoming phosphorus deficiency through its transformations into available form and thereby enhancing the agricultural productivity in a sustainable way.

Sclerotium rolfsii is one of the most important soil-borne plant pathogen which cause severe loss at the time of seedling development. It also causes collar rot in several crops and wild plants. In this experiment, exposure of pathogen to different light period and pH in order to assess the mycelial growth and number of sclerotia of S. rolfsii was done. For the light experiment three plate continues dark, light and 12 hour interval.
