  • Traditional fermented fish products are known for their rich probiotic values. In the present study, an effort was made to isolate and characterize the indigenous predominant LAB strain from commercially important four fermented fish products (Shidal, Lonailish, Ngari and Hentak) consumed in north-eastern regions of India, and further characterized their probiotic properties. A total 10 isolates were identified as Staphylococcus piscifermentans on the basis of biochemical and molecular characterization.

  • Panchamirtham is a kind of fruit based fermented product with a strong flavour. Panchamirtham is made from the five types of foods were used in Hindu worship and pooja to divinity. The current study was conducted to investigate the diversity of native lactic acid bacteria (LAB) populations and characterization in the indigenous fermented fruit mix. Initially, seven hundred and eighty seven isolates were enumerated from fermented fruit mix from five different media such as Eosin Methylene Blue, Lysogeny agar, Nutrient Agar, R2A and Endo Agar.

  • Lactic acid bacteria are described as heterogeneous group of regular, gram-positive, rod shaped, non-motile, non-spore forming bacteria with absence of catalase enzyme. Laboratory study was undertaken to isolate and characterize the lactic acid bacteria from silkworm gut in phenotype basis. A total of 21 silkworm gut samples were collected from silkworm breeds, Double hybrid {(CSR 6 X CSR 26) X (CSR 2 X CSR 27)} obtained from Chawki rearing center (CRC) at Annur, Coimbatore.
