Rat meat is a good source of protein and it is traded and consumed in different parts of the world. The bacteriological quality with regards to the occurrence of Salmonella spp. and Escherichia coli (E. coli) O157:H7 in smoked rat meat sold in different parts of Zaria, Nigeria was determined in other to ascertain its safety for human consumption.

Banana shrimp Fenneropenaeus merguiensis has emerged as an important aquacultured shrimp species in South East Asia and Australia. However, the quantitative genetic basis of economically important traits in this species are currently not available, while for body colour, cooked or uncooked, there are no genetic parameter estimates for any shrimp or indeed any decapod crustacean.

The domestic turkey (Meleagris gallopavo) is an important agricultural species that is largely used as a meat-type bird. Characterizing genetic variation in populations of domesticated species and associating these variation patterns with the evolution, domestication, and selective breeding is critical for understanding the dynamics of genomic change in these species.

Although astroviruses (AstV) have been detected in a variety of host species, there are only limited records of their occurrence in deer. One of the most important game species in Europe, due to its meat and antlers, is roe deer. Infected game animals can pose a threat to the health of other animals and of humans, so more attention needs to be focused on understanding the diversity of viruses in wildlife.

Brucellosis is a contagious zoonotic disease of great public health and economic significance especially in developing countries. The disease affects humans and several species of livestock and wildlife. Studies on Brucellosis in wildlife in Uganda have been limited to single populations particularly in Queen Elizabeth National Park.

Aujeszky’s disease is caused by Suid Herpes Virus-1 and species belonging to the genus Sus scrofa are the main reservoir hosts. This virus, however, is capable of infecting and causing severe disease, with an almost constant fatal outcome in other species, both domestic and wild (carnivores, monogastric herbivores and ruminants).

Siberian musk deer, one of the seven species, is distributed in coniferous forests of Asia. Worldwide, the population size of Siberian musk deer is threatened by severe illegal poaching for commercially valuable musk and meat, habitat losses, and forest fire. At present, this species is categorized as Vulnerable on the IUCN Red List. However, the genetic information of Siberian musk deer is largely unexplored.

he Intramuscular fat (IMF) content in meat products, which is positively correlated with meat quality, is an important trait considered by consumers. The regulation of IMF deposition is species specific. However, the IMF-depositionrelated mRNA and non-coding RNA and their regulatory network in yak (Bos grunniens) remain unknown.

The physical properties of toughness and firmness of broiler breast and leg meat has been meagerly influenced with respect to thawing methods. The total viable count of microwave oven thawed meat samples had less count than the other methods. E. coli and Salmonella species were not noticed in the broiler meat samples during the entire period of the experiment.

At present the poultry farming supply vital sprig of animal protein and also the most freely reared livestock species amongst the all livestock species. In spite of its huge benefits like production of meat, eggs and job generations it frequently creates some environmental risks which are not good to both human and animal, because the poultry farming is the main cause of nasty smell, water ,soil, and air pollution.

Food authenticity is currently an issue of major concern for food authorities, since incorrect labelling of animal foods may have remarkable negative consequences. To circumvent this problem, DNA based method had been utilised. The present study was carried out for the detection of meat species by using variability in ATPase Subunit 6 and 8 genes by multiplex PCR.

Pangasius catfish is one of the world‟s fastest growing fresh water species in aquaculture. Different research findings have revealed development of various value added products from pangasius having global acceptance and commercial potential. The industry has expanded in terms of production and trade. Basa is being the preferred imported variety of Pangasius. It is now traded to well over 100 countries worldwide due to its mild flavor, whiter meat color and flaky cooked texture. The fish farmers practicing aquaculture have reported reduced profit margin.
