To increase iron (Fe) intake in Fe deficiency-risk groups the combination of Fe source and food-vehicle must be chosen in order to minimize inhibitory effects of food matrix. Fe dialyzability and sensory properties were tested in six model systems (MS) made with extruded cereals fortified with different Fe sources such as FeNaEDTA, FeSO4 and EDTA/FeSO4 among others and with or without the addition of milk.

In this work, an ultrasonic-assisted surfactant/ionic liquid aqueous two-phase system (ATPS) extraction method was developed to extract six tetracycline antibiotics from food samples before their chromatographic determination using high performance liquid chromatography. The ATPS was formed with 1-allyl-3-methyl-imidazolium bromide, Triton X-100, and dipotassium hydrogen phosphate. The parameters including type and amount of surfactant, ionic liquid and salt, pH of sample solution, and sonication time were optimized.

After oral administration, probiotic lactobacilli meet a number of protection systems in the human body, such as exposure to gastric, pancreatic, and small intestinal juices. Overcoming these detrimental barriers allows living bacteria to adhere to the intestinal epithelium and permanently colonize the gastrointestinal tract (GIT), providing health benefits to the host. Based on this, the transit tolerance of 25 candidate probiotic lactobacilli from katak, yoghurt, and white-brined and yellow cheese to simulated bile and small intestinal juices of variable pH was investigated.
