  • Ebook "Vacuum drying for extending food shelf-life" is based on scientific articles published from the 1940s to the present, and is divided into five chapters: the first is an introduction to the use of vacuum in food processes; the second, third and fourth comprise advances on the most relevant vacuum drying techniques applied to food, namely conventional vacuum drying, freeze-drying and microwave-vacuum drying and the fifth deals with studies where vacuum drying techniques were compared to other drying techniques in terms of quality and/or engineering aspects.

  • The objective of the aircraft and naval industries is the optimization of structures in terms of lightening and strength. Thus, dual material plates, consisting of a light core covered by face sheets, are frequently used instead of solid plates because of their high bending stiffness-to-weight ratio.

  • The soil cohesion and angle of internal friction depend greatly on the soil moisture. Specifically, soil with a lower moisture content has a higher shearing strength than that in soil with higher moisture content. The finite element modeling of moisture transfers in unsaturated soils through the relationship between soil moisture, soil suction, unsaturated permeability and soilmoisture dispersivity is capable of accurately predicting the wetting front development.

  • The study measured and compared quality parameters such as pH, moisture content, ash content and hydrogen peroxide concentration of three types of honey from different localities in Ghana. Using the agar well diffusion, antimicrobial potential of natural honey from two different sources as well as an adulterated honey were determined against Staphylococcus aureus (ATCC 25923), Escherichia coli(ATCC 35218)and Klebsiella pneumonia (ATCC 27736). The results of the physico-chemical properties showed the following range of values; pH of (3.68– 4.49), moisture content (17.20 – 22.

  • Mango is widely preferred because of its excellent flavour and nutritional quality. Mango pulp from Totapuri was extracted and then was subjected to foam mat drying along with 5, 7, and 9% GMS and later with egg white as foaming agents and then dried at temperatures of 60, 70 and 80°C. Weight loss was used to estimate change in moisture ratio with respect to time and effective diffusivity. Three thin layer drying models were fitted to get the best fit model, which was selected on the basis of various statistical parameters.

  • This study investigates the effect of various types of pre-treatments in drying behaviour and quality of slices green mangos in convective drying. This experimental study was carried out with a constant air velocity and thickness (3±0.5 X 103 m) of „dasheri” variety of mangoes, having Julian shape in a laboratory scale dryer at 50, 60 and 70˚C drying air temperatures. Five chemical and one moist heat pre-treatment was done prior to drying to analyse the effect on drying behaviour and quality of final product (aamchur). Dried samples were evaluated for sensory and quality attributes.

  • Thin layer drying behaviour of mint leaves was investigated in axial flow tray dryer at air temperatures of 45, 55 and 65°C. Five different thin layer drying models namely Newton, Page, Logarithmic, Diffusion approach and Henderson and Pabis models were fitted to experimental drying data. The highest adjusted R2 with the lowest standard square error (SSE) and root mean square error (RMSE) were selected as statistical criteria to evaluate how well the tested models fit the drying data.

  • Deterioration mechanism due to drying and shrinkage of patch-repaired regions in reinforced concrete structures is analytically investigated. The moisture diffusion coefficient of the repair materials was determined by varying the drying temperature and the polymer-tocement ratios of the polymer-modified cement mortar (PCM) in the experiment. It is found that the diffusivity of PCM increases in proportion to the polymer-to-cement ratio up to 10%.
