The antioxidant activity of essential oils from leaves of Piper betle L. (T) and Cleistocalyx operculatus L. (V) and aerial parts of Ageratum conyzoides L. (H), indigenously grown in Thua Thien Hue province, Vietnam, is investigated. The quantitative structure–activity relationship (QSAR) model comprising 4-hydroxy-chromene-2H-one and its 26 derivatives is used to predict the radical scavenging activity of T, V, and H. The radical scavenging activity of the oils is experimentally determined with DPPH (1,1-diphenyl-2-picrylhydrazyl) via IC50 values.

Thirty five accessions of brinjal were assessed for variability for nineteen characters. Highly significant differences were observed among the accessions. High phenotypic and genotypic coefficient of variation was observed for number of fruits per cluster, number of fruits per plant, fruit length, fruit width, average fruit weight, fruit yield per plant, ascorbic acid content, total phenol content, shoot and fruit borer infestation indicating the existence of wider genetic variability for these traits in the germplasm.

Antidesma bunius known as ‘currant tree’ is a popular fruit in several Asian countries. During our exploration of wild fruits of Manipur, India, we identified this edible fruit growing naturally in their wild habitat. An exhaustive biochemical analyses revealed very high concentration of mineral contents relative to other well known fruits. Correlation analysis showed significant relationship between ascorbic acid content and antioxidant oxidant activity.

The Quince (Cydonia oblonga Mill.) is the only member of the genus Cydonia in the family Rosaceae. It is mostly used for culinary purposes and has great potential in processing industry. Quince genotype collections are maintained in quince block at ICARCITH, Srinagar. Physicochemical attributes play an important role in determining the nature and behavior of the fruit and their response to handling and processing. The present study was conducted during 2017-18, to evaluate ten genotypes of quince for physicochemical attributes both quantitatively and qualitatively.

Guava is highly perishable in nature, having shelf life only 2-3 days at ambient condition which is a concern during marketing and transportation. Hence a study was under taken to extend the shelf life of guava using a chemical named hexanal which is a chemical used to delay the ripening of fruits. Hexanal treatments such as 1200 μll-1 for 4.5 h, 1400 μll-1 for 3 h and 4.5 h and 1600 μll-1 for 3 h and 4.5 h had minimum change in texture and color. Hence these treatments were selected for further studies.

The study was undertaken to compare the effect of tray and solar drying on the quality attributes of pineapple powder and its storability in different packaging materials. For the study, pineapple slices were first subjected to osmotic dehydration process using sugar syrup of 60 oBrix for 12 hours at room temperature. Powder was prepared after solar (using natural solar cabinet dryer) and tray drying (at 50, 60, 70 and 80 oC) of pineapple slices.
