The proximate composition and the contents of some important minerals in the box crab, Pachygrapsus transversus were studied in fresh and dried specimens. Numerical Values determined for moisture, ash and carbohydrates in the fresh individuals were higher than those measured in the dried samples.

The objective of this study was to determine the effect processing on proximate and mineral compositions of ‘hepho’ (Lablab purpureus L.). Hepho is the Afan Oromo name for black climbing bean Lablab purpureus L. which is an indigenous legume in Ethiopia.

Fourty two yam (Dioscorea species) sprouted tubers were collected from six different major growing regions of Ethiopia and planted at Hawasa Agricultural Research Center. The Dioscorea species considered in this study were D. bulbifera, D. abyssinica, D. cayenensis, D. rotundata, D. praehensilis, and D. alata.

The effects of microwave cooking and other traditional cooking methods such as boiling and autoclaving on the nutritional composition and anti-nutritional factors of lentils were studied. Cooking treatments causing decrease in carbohydrate fractions was completely eliminated after cooking treatments, antinutritional factors (trypsin inhibitor, tannins and phytic acid) and minerals.

Farinograph values on the contrary, showed the good quality of standard flour but parameter water absorption was better with addition of oat flour due to non-starch polysaccharides presented in oat. Extensograph device showed that increasing addition of oat flour decreased resistance to extension. Colorant cereals generally can increase biodiversity in agriculture, and can be attractive raw materials for production foods with added value.

This study was carried out in Mediterranean climate and under rainfed conditions in Turkey for a period of three years throughout the growing seasons of 2014/2015, 2015/2016 and 2016/2017. It was conducted in a randomized complete block experimental design (RCBD) with three replications. In present study, genetic diversity for agro-morphological characters and macro/microelements were investigated in sixteen promising local faba bean genotypes originated from Turkey. According to the results of the study, mean grain yield varied from 2320 kg ha–1 (Tekirdağ-39) to 3130 kg ha–1 (Burdur-50).

Mango (Mangifera indica L.) is important commercial fruits of India. It is liked by people due to its high palatability, excellent taste and exemplary nutritive value. Mango pulp is rich is carbohydrates, minerals, vitamin C, starch, pectin, carotenoids, but lacks in protein, fat and some essential amino acids. But pulses are good sources of important dietary nutrients, proteins, minerals and vitamins. The present study was carried out to develop soy flour incorporated mango bars from two mango varieties namely Neelum and Totapuri (Bangalora) with pretreated soy flour.

This study aimed at determining the effect of cooking time on nutritive characteristics of Justicia galeopsis leaves. J. galeopsis leaves were collected from cultivated farmlands located at Abobo and boiled at 100 °C respectively during 30, 45 and 60 min. Then, nutrients and antinutrients compositions were investigated using standard methods. Some molar ratios between antinutrients and mineral were also calculated and mineral bioavailability predicted.

Fried snacks are popular among young Indian population. An experiment was conducted for nutritional quality evaluation of the fried cowpea snacks. Boondi, sev, enrobed nuts and fried nuts were formulated by using cowpea. These products were evaluated for proximate composition, mineral content i.e. iron, calcium and free radical scavenging activity.

A study was conducted to investigate the chemical and mineral composition of cultivars belonging to four different genomic groups. Results revealed that B genome rich cultivar, Karpuravalli (ABB), had higher dry matter and starch, less moisture, total soluble solids, titratable acidity, total and reducing sugars, when compared with A genome rich cultivar, Robusta (AAA) and Poovan (AAB). Similarly cultivars with B genome had higher nitrogen, lesser calcium, potassium, zinc and iron, while mixed influence was noticed with regard to minerals like phosphorus and magnesium.

Diagnosis and recommendation integrated system (DRIS) norms were computed from the data on leaf mineral composition, soil available nutrients, and corresponding mean fruit yield of three years (2016–2019), collected from the set of 50 irrigated commercial ‘Dashehari’ mango orchards, representing 2 locations and 3 basalt derived soil orders (Entisols, Inceptisols, and Vertisols) rich in smectite minerals.
