  • Four species of oyster mushroom including P. djamor, P. eous, P. florida and P. citrinopileatus were tested for their yield performance, of them, the most promising yield was obtained in P. eous and P. djamor with minimum spawn running period. On subjecting them with additional substrates, sorghum grain was superior over other spawn substrates for quality spawn production in terms of earliness in growth of spawn and total yield followed by wheat grain.

  • Among the oysters, P. eous recorded highest levels of non-enzymatic antioxidative substances. Total glutathione content was significantly very high in P. eous, followed by P. sajor-caju, P. flabellatus and H. ulmarius. High level of total phenols, flavanoids, lycopene total carotenoid and vitamin A were recorded in P. eous. This was followed by P. sajor-caju, P. flabellatus and H. ulmarius. There was no significant difference in vitamin C content among the oyster mushrooms.

  • Three species of Oyster mushroom like, Pleurotus ostreatus, Pleurotus sajor-caju, Pleurotus florida mother culture were procured from DMR, Solan and wild collected strain was collected from Bankura district in West Bengal during the monsoon season of 2017- 18.   • Five strains of oyster mushroom were tested for various parameters such as spawn run days, pin head initiation days, days taken for first harvest, fruit body/bag, and average weight of fruit body, yield and biological efficiency. Results indicate that highest biological efficiency was recorded in strain R-13-13-05 (96.6 %) followed by strain R-13- 13-07 (75.3 %), R-13-13-03 (74.8 %) and R-51 (66.4 %), respectively, and Lowest BR was observed in strain R-13-13-04 (58.4 %) among all the tested strains.

  • The results showed that when the salt concentration was 20%, the suplemented water was 200% (of the raw material) and the fermentation time was 60 days, the contents of amino acids, reducing sugars, total acid were the highest (11.73; 9.87; 8.71 g/100 g dry matter, respectively) and the color of fermented oyster mushroom sauce was the darkest.
