Modelling the respiration rate of fresh-cut pear (Pyrus communis L.) packaged in modified atmosphere
Respiration rate is the important factor involved in creating a modified atmosphere inside a package that will extend the shelf life of fresh fruits and vegetables. Thus, modelling respiration rate of the selected produce is crucial to develop a modified atmosphere packaging (MAP) system. In this study, MAP has been combined with 1% Calcium chloride and 1% citric acid solution. Respiration rates of fresh-cut pear packaged in polypropylene pouches at 8 ˚C. A mathematical model describing the dynamics of O2 and CO2 concentrations inside the MAP package of fresh-cut pear was formulated.
