Cookies were prepared by substituting wheat maida with pearl millet flour (PMF) from three cultivars (viz. Shanti, Dhanshakti and Pioneer 84M64) at 0, 10, 20, 30, 40 and 50% levels using traditional creamery method. Incorporation of PMF in cookies decreased diameter, spread ratio and spread factor of cookies whereas the thickness increased slightly. The colour values L* and b* decreased while a* increased with the addition of PMF to the cookies. The hardness, breaking strength and cutting strength of cookies were increased with the incorporation of PMF in cookies.

Genetics of quality parameters and their associations with grain yield and its component traits have a direct bearing on devising effective strategies for breeding biofortified crop cultivars. A newly developed 54 hybrids of pearl millet showed large genetic variability for yield and nutritional traits. Correlation studies revealed that single plant yield has positive significant correlation with the agronomic traits viz., plant height, number of productive tillers, test weight, single head grain weight and quality traits viz.

Interspecific hybrids between cultivars of pearl millet [Pennisetum glaucum (L.) R. Br.] with 2n = 2x = 14 and its wild relative Napier Grass [Pennisetum purpureum (K.) Schum] with 2n = 4x = 28, which have multicut behaviour, perennial nature, high biomass and drought tolerance traits for crop improvement, were obtained by cross hybridization. Twenty hybrid progenies were obtained and then examined based on the morphological traits. Nine of them were confirmed to be true interspecific hybrids.
