Polysaccharides strongly affect the sensorial properties of foods, which is partly related to the lubrication they provide. We investigated the lubrication performance of polysaccharides with different characteristics (i.e. molecular weight, conformation, stiffness, and charge density) to identify the most relevant structural features related to lubrication ability.

In the present study extracellular polysaccharide (EPS) was characterized from Pseudomonas aeruginosa B01. EPS was purified using ethanol precipitation and dialysis. The purified EPS from P. aeruginosa B01 was analyzed using a High Performance Liquid Chromatography (HPLC). The infrared spectra of EPS from P. aeruginosa B01 clearly showed the presence of carboxylate groups. The FT-IR spectrum indicated an intense absorption band in the region of 3296 cm-1 on the stretching vibration of hydroxyl groups (OH).

The aim of this study was to study the conformational changing when sulfated groups were introduced to the molecular chain of native tamarind seed polysaccharide (TSP). Light Scattering (LS) method was used to determine conformation of TSP and its sulfated derivative TSPS. The results indicated that both TSP and TSPS have a highly branched and more sphere-like molecule; however, after sulfation, the TSPS became more branched structure than native polysaccharide.

Ulvans are sulfated polysaccharides derived from the cell wall of green seaweeds. The chemical structure of ulvan extracted from Ulva reticulata is reported, focusing on investigation of the sulfated modification of the ulvan and the changes in structure and anticoagulant activity. The results showed that sulfated modification was able to change the ulvan conformational structure and markedly enhance its anticoagulant activity.

The water-soluble crude polysaccharides obtained from the liquid culture broth of Cordyceps militaris by ethanol precipitation were fractionated by DEAE cellulose and Sepharose CL-6B column chromatography. This fractionation process resulted in three polysaccharide fractions that were termed CPSN Fr I, CPSN Fr II, and CPSN Fr III. Of the fractions, CPSN Fr II was able to upregulate the functional events mediated by activated macrophages, such as production of nitric oxide (NO) and expression of cytokines (IL-1 and TNF-).
