In this study, we evaluated whether bacteria can utilize the prebiotic present in soybean meal and determine the prebiotic index and activity score of the soybean meal by the newly isolated probiotic, Bacillus velezensis BS. The effect of soybean meal-containing medium on the growth, digestive enzyme secretion, and pathogenic resistance of the B. velezensis BS were also examined.

Synbiotics are the synergistic combination of probiotics and prebiotics which helps in accomplishment of health benefits in host. Whey is a nutrient rich by-product of dairy industry which is not being utilized properly and disposed. The present work is designed to standardize the procedure for preparation of synbiotic beverage utilizing whey. In this study Lactobacillus casei NCDC 298 was used as the probiotic organism and inulin was used as prebiotic.

The present investigation was carried out to standardize and evaluate plain, probiotic, prebiotic and synbiotic yoghurts using selected yoghurt commercial starter culture, probiotic cultures (L. acidophilus, L. casei, L. plantarum, and L. rhamnosus), and prebiotic fibre sources viz., oat flour, inulin and banana flour. Based on the acceptance of the product from the sensory point of view, the overall acceptability score for plain and probiotic yoghurt prepared with 2 % inoculation was higher than 1 % inoculation. The demand for foods with specific functional characteristics and nutritional balance is increasing. This study was investigated for the feasibility of symbiotic yoghurt with Lactobacillus brevis as probiotics. This yoghurt was prepared by addition of natural fruits (mango or banana). Hereby the drinkable yoghurt might act as a good source of calcium, Vitamin D and other nutrients. The incorporation of fruits also enhances the flavour of yoghurt establishing the need to optimize the level of inclusion of these fruits in yoghurt.

Lassi is a popular fermented product consumed mostly in northern India during summer as refreshing drink. The present study was carried out with incorporation of carrot extract as 5, 10, 15 and 20 per cent levels and represented as T1, T2, T3 and T4, respectively. Among these levels, 15 per cent level of addition was found to be acceptable by sensory panel (9 point hedonic scale) and was used for the production of synbiotic lassi with Lactobacillus casei (NCDC 298). The prepared synbiotic lassi was subjected to physicochemical and microbial analysis with control and probiotic lassi.
