Production of raisin

The technique of raisin production in India is mostly based on the dipping of the grape bunches in emulsion having 2.5% potassium carbonate and 1.5% ethyl oleate for a duration of 2 to 4 minutes, and subsequent shade drying in open tier system (Adsule et al., 2012). Quality is one of the major concerns in raisin production; hence, extensive research is necessary to find the effect of storage temperature on physico-chemical characteristic of raisins prepared from seedless varieties of grapes.

A study on production and marketing of raisins in Vijayapura district was carried out during 2016-17 with an objective of analysing the viability in production and marketing of raisins. The study indicated that the cost incurred to produce raw grapes (11.90 tons) from an acre of grape orchard was Rs. 2,04,584.49.

A biscuit is a baked, commonly flour-based food product. They are made with baking powder or baking soda as a chemical leavening agent rather than yeast. In this study, raisin was produced from pre-treated grapes by tray drying method. Grapes were cleaned and soaked in a different type of solutions such as potassium carbonate, olive oil, soy lecithin, and sugar concentration for different immersion time. The pre-treated grapes were then dried in a hot air tray drier at 50°C and airflow 1.0 m/s. Results showed that drying time was varied for pre-treated grapes. The shortest drying time of 61 h) was obtained for those grapes which were dipped in 6.7 % potassium carbonate solution for immersion time of 5 min.

Grapes are good source of dietary sugars, organic acids and provide good amount of minerals like iron and phosphorus and some vitamins.
