Tensoactive species obtained by papain hydrolysis of soy protein were characterized structurally and physicochemically, and their foam-forming and -stabilizing capacity studied. Protein structural changes upon reaction ending were correlated with functional and interfacial properties and with the behaviour thereof with varying hydrolysis degree.

In this study Roselle seed protein isolates were digested using pepsin followed by pancreatin at different time in order to produce hydrolysate with good antioxidant. The prepared hydrolysates were as effective as antioxidants in model systems, in scavenging of free radicals. This effect was concentration-dependent and was also influenced by the hydrolysis time.

The sailfish trimmings protein hydrolysates were found to have high nutritional value and good functional properties. The study results suggested that protein hydrolysates from sailfish trimmings could be used as a protein source in food systems and were a promising potential food ingredient.

Sea cucumber innards (SCI) are the main waste of the sea cucumber processing industry. SCI protein hydrolysates were prepared using Papain and kinematic parameters of SCIPapain hydrolysis reaction were studied. The hydrolysates were subsequently analyzed for their antioxidant potential and amino acid composition for the first time.

The aim of this study is to obtain the copper-binding protein hydrolysate from the white leg shrimp head (WLSH) by-product using enzymatic hydrolysis. The outcome indicated that the copper-binding capacity (CBC) of the WLSH protein hydrolysate achieved the maximum value of 19.4±0.5 mg Cu2+/g protein with hydrolysis conditions including Flavourzyme preparation, pH 7.5, 50°C, the enzyme : substrate (E:S) ratio of 80 U/g protein and 5h of hydrolysis.

We derived a protein hydrolysate with rich content, which includes proteinogenic and nonproteinogenic amino acids, from chicken feathers by using an alkaline hydrolysis procedure with high yield success. After foliar application of aqueous solutions (0.05%, 0.075%, and 0.1%) of chicken feather protein hydrolysate (CFPH) to the seedlings of wheat (Triticum aestivum L. ‘Altındane’ and ‘Bezostaya’), their effects were evaluated on important physiological and biochemical parameters.

The major hydrolytic variables for deriving functional hydrolysates from red meat of yellow fin tuna (Thunnus albacares) were optimized using response surface methodology (RSM). A central composite design (CCD) was employed to obtain the best possible combination of enzyme-substrate ratio (X1: 0.25-1.5%) and hydrolysis duration (X2: 30- 240 min) to derive hydrolysates with strongest functional properties with emphasis on protein recovery and sensory acceptability.

The antioxidant and antimicrobial properties of fish protein hydrolysate (FPH) prepared from Tilapia waste was evaluated. The Protein hydrolysates was prepared from tilapia (Oreochromis niloticus) waste using papain enzyme under the optimum conditions viz., temperature of 50°C, pH of 6.5, E/S ratio of 1% and 60 minutes time. The prepared proteinhydrolysate was evaluated for antioxidant and antimicrobial properties in vitro at different concentrations.
