  • The present investigation was carried out to study effect of processing on the seeds which were used for inclusion in the energy bars of sports person. The seeds selected for the study were Flax, Chia, Pumpkin and Finger millet seeds. Proximate parameters and mineral estimation were done to assess the nutritional profile of all the seeds. The result shows that protein content of the seeds were increased significantly during germination while it was decreased significantly during roasting and popping.

  • The present investigation was carried out to develop the weaning food with incorporation of horse gram malt and evaluated for proximate, rheological, functional and sensory characteristics. The horse gram malt was incorporated at the concentration 0 (Control), 10 (WH1), 20 (WH2) and 30% (WH3) substitute with rice flour (90, 80, 70 and 60%) further added carrot powder (5%) and skim milk powder (5%) for enrichment. On the basis of sensory evaluation, the WH2 sample was found to be most acceptable with respect to all sensory parameters over other samples.

Guava cheese was prepared from fresh guava fruits adding and without adding milk powder.   • Evaluation on the physicochemical and sensory properties of wheat flour doughnuts substituted with millet flour was investigated. Different levels of millet flour (20, 30, 40 and 50%) and Wheat flour (80, 70, 60 and 50%). Chemical (moisture, fat, protein and ash), physical (specific volume, weight loss, spread ratio and yield) and sensory evaluation were conducted on all samples. Proximate analyses result indicated a higher percentage of protein and fat in control doughnut compared with substituted millet flour. Doughnut yield was ranged from 29.20-34.02%.

  • The present investigation was aimed to study the proximate composition, quality parameters, and microbial analysis of microwave heated egg liquid samples obtained from exotic (white leg horn) and indigenous breed eggs (aseel). The microwave heating was done by maintaining different time levels (20, 40 and 60 S). By analyzing the data obtained during study of proximate composition, it was found that, microwave heating at 40 S was the best condition to pasteurize the egg liquid samples for storage. The quality of microwave heated samples was determined by considering pH (7.21 and 6.

  • In India, fish consumers prefer three types of retail markets viz., local dry fish market, local fresh fish market and supermarket wherein no stringent food safety measures are followed and monitored. Hence, the present study was planned to analyze food safety parameters for different outlets by collecting equal numbers of fish samples from all three markets of Navi Mumbai region. Proximate composition, biochemical and microbiological parameters were evaluated. Antibiogram for the isolated Staphylococcus aureus and Escherichia coli from these fishes was studied.

  • The present study was undertaken to evaluate the nutritional quality and value addition of Black gram grown in H.P. Three cultivars/varieties of Black gram viz. UG-218, HIM MASH and Local cultivar were taken for the study. The various biochemical parameters studied were physico-chemical characteristics, proximate compositional, nutritional quality, functional properties and anti-nutritional constituents. The results of the investigation showed that UG-218 had maximum length, breadth and 1000 seed weight as compared to HIM MASH and Local cultivar.

  • An experiment was carried out to know the influence of application of different basal dose (50 and 80 % N) of liquid fertilizer Urea Ammonium Nitrate at different application depth (7 and 9 cm) on wheat growth parameters. The basal dose was provided with UAN and thereafter by foliar spray of UAN. Different crop growth parameters like germination count, plant height, number of tillers per m row length, grain yield and biological yield of wheat crop were studied. Plot with urea application was taken as control plot.

  • Shrimp head waste has been used as raw materials for production of chitin and protein hydrolysate. In this study, a facile and efficient pressing method was developed to separate the solid and liquid phases from shrimp heads. The different solid/liquid ratios as well as the size of the solid component can be obtained easily by changing the pressing operating parameters. The solid fraction was used to prepare chitin and chitosan. This pressing method can save large amount of water and chemicals in the production of chitin and it can be used in the large-scale.
