The objective of this study was to determine some physiological properties (mass ratio, moisture) and biochemical properties (the content of the chlorophyll, carotenoids and The Total Polyphenol (TPC)) of Musa paradisiaca and Musa acuminata AA banana varieties peel, which were harvested in Tien Giang province, Vietnam at 03 stages of ripeness (I, III and VI in the color index 08 ripeness of banana).

To investigate the influence of the banana ripening stage on the change in the content of bioactive components and their bioactivities, ripening stages of porcelain banana peels were screened for the total phenolic content (TPC) and antioxidant activities using three methods, including DPPH scavenging assay, ferric reducing/antioxidant power (FRAP) assay, and inhibition of polyphenol oxidase activity (PPO assay).

Our previous research with chitosan leads us to conclude that 2.5% chitosan can be promptly used as a fruit coating. However, to be used as a fruit coating for climacteric fruits, the effect of ethylene trapped under chitosan coating on ripening needs to be blocked. 1- methylcyclopropene (1-MCP) is known as an anti-ethylene and it can be applied in combination with chitosan.

The total organic acid content in papaya was relatively low and tends to decrease from young fruit stage to ripe fruit stage. Based on this study results, Taiwanese papaya fruit should be harvested after physiological maturity and before ripening completely (from 13 weeks of age to 15 weeks of age) to ensure the nutritional value of the fruit during storage.

Ethylene inhibitor compound 1-methylcyclopropene (1-MCP), sanitizer chlorine dioxide (ClO2) and polyhexamethylene guanidine (PHMG) were studied to know the postharvest behavior and storage life of banana fruits (cultivar Yelakki), harvested at second stage of its ripening. Banana fruits were pretreated with the above chemicals either singly or in combination and stored in corrugated fiber board boxes at ambient condition. The 1-MCP treatment had delayed the colour change of peel as well as fruit softening and extended t h e shelf life by suppressing the respiration.
