The present study was planned to estimate occurrence of invasive Salmonella spp. in retail chicken supply chain of Mumbai and quantifying Salmonella at crucial stages of processing by the Most Probable Number (MPN) and confirmation by invA gene by PCR assay. A total of 18(n = 108) farm samples were found to be positive for Salmonella with prevalence of 16.66% and statistical significance was observed amongst different sources at farm (p=0.027).

Salmonella is a foodborne pathogen having a worldwide public health concern. The present study was undertaken to characterize Salmonella typhimurium of animal origin based on cultural isolation and genetic diversity studies by employing ERIC-PCR and REP-PCR. The present study was conducted to evaluate the effect of Vitamin C on the pathogenesis of Salmonellosis in broiler chickens. Seventy two, day old broiler chicks were divided into 4 groups-I, II, III and IV. Group I served as control. Group II was administered Salmonella enteritidis (LD50=2x108 organisms) orally. Group III was administered Salmonella enteritidis (LD50=2x108 organisms) orally and Vitamin C mixed with water @200ppm. Group IV was administered with Vitamin C mixed with water @ 200ppm.

Present study was undertaken to assess the hygiene quality of the meat, milk and also its prevalence on human population. A total of 330 samples including, chicken meat (n=98), Chevon (n=82), raw milk samples (n=90) and human urine (n=56) and stool samples (n=4) Samples were aseptically collected from different districts of Chhattisgarh. Therefore, the application of natural antimicrobial agents from plant extracts combined with antibiotics to overcome this problem is of major importance. Study was conducted to evaluate the effect of Lactobacillus sakei as protective culture on extended storage of chicken breast fillets kept under refrigeration temperature. Chicken fillets were allotted in to two different treatment groups namely, T1 (as control) and T2 (with Lactobacillus sakei). Total viable count increased significantly in both the samples with the advancement of storage period. Coli titre count was found to be nil in all the samples throughout the storage period up to 12th day. No E. coli organisms could be isolated on 0, 5th, 7th, 9th and 12th day in both the samples.
