In this study, we used the reliable GC-FID/MS technique to analyze the methyl ester derivatives of 37 different kinds of fatty acids. The results showed that high saturated fat concentration in all samples was mostly palmitic acid, whereas the low unsaturated fatty acid content in the cis form was primarily oleic acid and linoleic acid. The amount of monounsaturated and polyunsaturated fats is quite low.

Dietary fats are closely related to Coronary Artery Disease (CAD). Cholesterol, saturated and trans fats are harmful whereas MUFA, PUFA (especially Omega-3 PUFA) are beneficial for the heart. Choice of heart healthy oil could decrease the occurrence of CAD. This article reviews the benefits/harms of common edible oils on heart health. A heart healthy oil should be cholesterol and trans fats free, low in saturated fats, high in MUFA and PUFA, should have ideal N-6 to N-3 ratio (< 4:1) and high smoking points. Mustard and Canola oils offer to be ideal in this regard.

In this study, we established the process of extracting, enriching and isolating canthaxanthin from the post-fermentation biomass of the saline bacteria Paracoccus carotinifaciens VTP20181 isolated in Vietnam at laboratory scale. This process consists of 5 steps: Dry biomass generation, dry biomass extraction, removal of saturated fat, fast column chromatography and slow column chromatography, canthaxanthin purification. Canthaxanthin compound is obtained with 98% purity. Canthaxanthin extraction and purification efficiency of the whole process reached 55.5%.

This research aimed at investigating the effects of extraction parameters on the extraction efficiency and chemical characteristics of Trungdu tea (Camellia sinensis O. Kuntze) seed oil, which is similar to olive oil with high portion of unsaturated fatty acids, especially essential linoleic acid and low content of saturated fat. The study parameters were particle size (0.25 - 2.00 mm), material/solvent ratio (1/12 - 1/6), temperature (25 - 55 oC), time (5 - 11 h), speed of solvent movement (0 - 250 r/m) and extraction times (1 - 3 times).
