A comparative study was done to determine the most suitable combination of two cultivars of sweet potato for sauce preparation incorporated within the ratios T1 = TSP 12-9 (100%), T2 = TSP 12-10 (100%), T3 = TSP 12-9 + TSP 12-10 (50% each), T4 = TSP 12-10 (75%) + TSP 12-9 (25%), T5 = TSP 12-10 (25%) + TSP 12-9 (75%).

This study evaluated a number of factors (including salinity, pH and temperature) affecting the growth of Halanaerobium lacruisei bacteria in order to reduce organic compounds (COD concentration) in saline wastewater of a fish sauce processing plant. The results of the study showed that halophillic bacteria had good capacity of reducing COD concentration under specific conditions.

Tomato (Solanum lycopersicum Mill.) is the most popular vegetable world-wide. It is used as a fresh vegetable and also can be processed and canned in the form of paste, juice, sauce, powder or as a whole. The ripe fruits are good source of vitamin A, B and C which add a wide range of colour and flavour to the food. Recently, it started gaining more medicinal value because of the antioxidant property of ascorbic acid and lycopene content. The objective of the present study was to assess the nutrient and antioxidant properties of fresh, primary and secondary processed King chilli (Capsicum chinense) products. Six secondary products (King chilli sauce with pulp and extract, king chilli toffee, curry paste, fish masala powder and sprinkler masala powder) were developed by incorporating varying amounts of King chilli. Antioxidant and bioactive components were estimated using standard methods in triplicates and were subjected to sensory evaluation studies.

Tomato though botanically a fruit is generally considered as vegetable because of the way in which it is consumed. Fresh tomatoes are very refreshing and appetizing but cannot be stored for a long period. During peak season, about 25% of the produce is spoiled due to mishandling and such losses can be avoided by converting tomatoes into different value added products. Tomato can be processed into pulp, paste, puree, juice, ketchup and sauce. In India, tomato sauce and ketchup are very popular.

Shrimp by-product from shrimp processing industry was hydrolyzed by alcalase and flavourzyme and the process was optimized by response surface methodology. Shrimp byproduct was ground and treated with fixed alcalase 0.2 % (4.8A U/kg protein) and flavourzyme of different loadings (0.1 - 0.4 %), pH (6.0 - 9.0), temperature (45 - 65 oC) and hydrolysis time (5 - 1 3 h). At optimal conditions of pH of 7.5, temperature of 59 oC, flavourzyme loadings of 0.4 % (100 LAPU/g protein), alcalase of 0.2 %, and hydrolysis time of 8.2 h, hydrolysis degree was 36.

The present investigation focuses on standardizing the process for preparation of sour cream enriched therapeutic food products. Sour cream was prepared by ripening of cream with the addition 6% culture of Lactic Acid Bacteria (Lactobacillus acidophilus and Streptococcus lactis) culture and 0.2% xanthan gum. The prepared sample of sour cream was further used in the exploration of food preparation i.e. sour cream spread, sour cream salad and boondi raita. Sensory characteristics of sour cream spread, sour cream salad and boondi raita were studied.

These processes also were included in early fermentation of beer.[11] These processes were introduced in early Mesopotamia, Egypt, and India, and still use the same basic biological methods. In brewing, malted grains (containing enzymes) convert starch from grains into sugar and then adding specific yeasts to produce beer. In this process, carbohydrates in the grains were broken down into alcohols such as ethanol. Later other cultures produced the process of lactic acid fermentation which allowed the fermentation and preservation of other forms of food, such as soy sauce.
