  • The aim of this study was to isolate amylase-producing fungi, optimize the cultural conditions using solid state fermentation (SSF) and characterize the partially purified enzyme. Six fungal strains isolated from soil and decayed onion samples were screened for their ability to secrete amylase. Culture medium was optimized using One-factor-at-aTime (OFAT) methodology under SSF.

  • Diabetes is a common metabolic disorder characterized by abnormally increased plasma glucose levels. Postprandial hyperglycemia plays an essential role in development of type 2 diabetes. Inhibitors of carbohydrate-hydrolyzing enzymes such as α-amylase retard the liberation of glucose from dietary complex carbohydrates and delay the absorption of glucose. The purpose of the study was to isolate and select α-amylase inhibitor-producing endophytic fungi from wellknown medicinal plants used in the treatment for diabetes and inhabiting in Uzbekistan.

  • The purpose of this study was to isolate and screened amylase producing fungi from different sources. A total of twenty amylase producing fungal isolates were obtained from soil, fruits, vegetables, baked food, and flour on the starch mineral agar medium. It was observed that ten fungi and ten yeasts isolates produced amylase, only nine fungal colonies showed positive results for amylase production. The maximum amylase activity shown by yeast isolates YPO3 (3.2cm) followed by YBR2 (3.1cm).
